Colorful Greens | Greek Farro Salad


Way before the new year began, I noticed my eating habits were absolutely horrible. Sure pizza and hamburgers almost every night tasted delicious, but I quickly felt it's toll on my body both physically and mentally. I was always tired and weak, my anxiety was at an all time high, and I never felt like I
was happy; I was almost always cranky with a majority of my smiles and laughs being fake because I knew I had to show some compassion out in public. These feelings were obviously not fun. To wake up every morning not feeling like I slept even though I had a full 8 hours of sleep was exhausting and it finally made me realize, you actually are what you eat. Since 2015 was just ending and 2016 was starting, it gave me the push to leave all my bad habits with 2015 and be the best I can be with this new year. While I will admit that I sometimes miss a day or two, I have worked out basically every single day and I hope to WILL continue to do so. I noticed that upon keeping my bad eating habits, but working out almost everyday, I got rid of my fatigue and anxiety. I became more alert, grasping things in my classes rather than falling asleep and I thought more rationally throughout the day. I also became more calm and relaxed.

However this was only one battle I won as I knew exercising only masked the wickedness going on in my insides. I now had to say goodbye to pizza, hamburgers, fries, and chips and hello to salads, fruits, and colorful veggies, which to my surprise I took no time to get used to considering I already liked healthy foods, I was just too lazy to head to the store and find the time to make something. With the help of some amazing food blogs, I found a love for veggies, home cooked meals and realized through concentration that I actually can cook! So today I thought I would go ahead and share one amazing recipe I found through a blog called Cookie and Kate. I highly suggest you check it out as Kate's recipes are really out of this world.






The recipe I chose to make from Kate's blog, is a Greek Farro Salad. Of course my salad doesn't look nearly as tasty as it does in Kate's pictures, it still tasted pretty good. The salad consisted of baby arugula, Farro, roasted bell pepper, chickpeas, chopped cucumbers, Kalamata olives (which I've never tasted before the recipe and found that these tangy olives are quite tasty), feta cheese, parsley and some salt that all combine beautifully. Of course let's not forget the dressing, which really made the salad. The dressing consisted of olive oil, lemon juice, honey, garlic, oregano, salt, red pepper flakes, and black pepper. I was a bit hesitant with the roasted bell peppers, since I've never really been too fond of them, but I know I couldn't have left them out since they were a major part of the recipe and as it turns out they went extremely well in the salad and I now I'm questioning myself why I even disliked them in the past. This recipe takes 40 minutes to make, however I have no background when it comes to cooking so I took my time going at a steady pace and that ended up being approximately an hour. So keep this in mind if you're a beginner at cooking like me. 

This recipe is definitely a 5 out of 5 and the dressing of course breaks the rating scale! I'm really happy that I found Kate's blog when I did and I'm excited to try more recipes and eat my way to a healthier life. If you would like this recipe, click here!
